Jack’s Food Blog: Rome

Day two: Rome, Italy.  I woke up at 12:00 today to hear my parents walking through the door. My Dad yells “Wake up Jack we brought you a porchetta sandwich!”   This savory pork sandwich, also known as a Porchetta Panini, is a Roman classic that I had heard about and it turned out to be the perfect lunch.  Porchetta is a heavily salted pig that is spitted and roasted over wood. It is usually spiced with herbs such as fennel, rosemary, and garlic. Served on a simple crusty roll, this spiced pork was amazing. Let’s break this sandwich down step by step. The roll was crusty on the out and soft and tender on the inside. The pork was very spicy on some pieces, but it was perfect with the juicy pieces that were not spiced. Overall this was one of the best sandwiches I’ve ever had.
